Based on the Flemish classic (Oud Bruin) this is a very complex beer that has many flavor facets. Brewed with Redwood tips and the rare New Zealand Nelson Sauvin Hop, this lively red ale was aged for 8 months before kegging. After the main fermentation roughly 35% of this beer was soured in stainless steel, of the remaining beer about 60% was aged in red & white wine barrels, and 40% split between Brandy and bourbon barrels for aging. All of these beers were then blended together with a small amount of our Grand Cru (the Brother David’s Belgians ales aged in Wine Barrels). The resulting beer is very complex medium bodied beer with vinous character from the wine barrels, spicey notes from both the redwood and the Nelson Sauvin hops and a light sourness from the bacteria fermentation in the stainless, all underlined by a smooth round Belgian character from the Brother David’s Grand Cru.
